Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry into a rectangle, approximately 10×14 inches.
- Sprinkle half of the granulated sugar evenly over the pastry and add the vanilla extract and a pinch of salt if using.
- Starting at one long side, roll the pastry tightly towards the center until you reach the middle; repeat with the other long side.
- Cut the rolled pastry into ½-inch thick slices and lay them flat on the prepared baking sheet.
- Sprinkle the remaining sugar over the top of the cookies.
- Bake the cookies in the preheated oven for about 12-15 minutes, or until they are golden brown and crispy.
- Remove from the oven and let them cool for a minute before transferring to a wire rack to cool completely.
Notes
Store baked cookies in an airtight container at room temperature for 3-4 days or freeze for up to 3 months. Reheat in the oven at 350°F for a few minutes to regain crispiness.
