French Palmier Cookies

  • 1 sheet puff pastry (thawed) Make sure it is halal-friendly.
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract (optional)
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry into a rectangle, approximately 10×14 inches.
  3. Sprinkle half of the granulated sugar evenly over the pastry and add the vanilla extract and a pinch of salt if using.
  4. Starting at one long side, roll the pastry tightly towards the center until you reach the middle; repeat with the other long side.
  5. Cut the rolled pastry into ½-inch thick slices and lay them flat on the prepared baking sheet.
  6. Sprinkle the remaining sugar over the top of the cookies.
  7. Bake the cookies in the preheated oven for about 12-15 minutes, or until they are golden brown and crispy.
  8. Remove from the oven and let them cool for a minute before transferring to a wire rack to cool completely.

Notes

Store baked cookies in an airtight container at room temperature for 3-4 days or freeze for up to 3 months. Reheat in the oven at 350°F for a few minutes to regain crispiness.
