Ingredients
  

Filling
  • 1 lb ground sausage or your favorite meat alternative
  • 2 medium onions, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp thyme dried or fresh
  • Salt and pepper to taste
  • 1 sheet puff pastry thawed if frozen
  • 1 egg beaten for egg wash
  • Optional: Shredded cheese (like Gruyère or Swiss)

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced onions and cook until they become soft and caramelized, about 15-20 minutes.
  3. Stir in the minced garlic, thyme, and season with salt and pepper. Allow to cool slightly.
Mixing
  1. In a large bowl, combine the ground sausage with the cooled onion mixture. If you’d like to add cheese, mix it in at this stage.
Rolling
  1. Preheat your oven to 400°F (200°C).
  2. Roll out your puff pastry sheet on a lightly floured surface and cut it into rectangular pieces, around 4x6 inches.
  3. On one side of each rectangle, place a generous spoonful of the sausage and onion filling.
  4. Fold over the other half of the pastry to create a pocket and use a fork to seal the edges.
Baking
  1. Brush the top of each roll with the beaten egg for that gorgeous golden finish.
  2. Arrange the rolls on a baking sheet lined with parchment paper and bake for 25-30 minutes until they are golden and puffed up.
  3. Let them cool for a few minutes before serving, and enjoy your flavorful creation!

Notes

These rolls can be customized with different fillings and cheese options. Freeze unbaked rolls for later; just add a few extra minutes to baking time when cooking from frozen.
