Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and season with salt and pepper. Cook for about 20-25 minutes, stirring occasionally, until the onions are caramelized and softened.
- While the onions are cooking, season the chicken breasts with salt, pepper, and thyme. Lay the chicken breasts flat in a separate baking dish.
- Pour the chicken broth and heavy cream over the seasoned chicken.
- Spread the caramelized onions evenly over the chicken in the baking dish.
- Sprinkle the shredded Gruyère cheese over the top, covering the onions and chicken fully.
Baking
- Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
- Let the dish cool for a few minutes before garnishing with fresh parsley. Serve and enjoy!
Notes
For optimal flavor, take your time caramelizing the onions. You can mix different cheeses for additional flavor. Rotisserie chicken can be used as a time-saving alternative.
