  • 2 large onions (sliced)
  • 1 cup beef broth
  • 1 cup French onion soup Make sure it's gluten-free if necessary
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 2 cups Swiss cheese (shredded) Other cheeses can be used as a substitute
  • as needed Baguette slices (optional, for serving) For added crunch

Preparation
  1. Begin by slicing your onions thinly to ensure even caramelization. Season the beef with salt and pepper.
Searing the Beef
  1. In a large skillet, heat the olive oil over medium-high heat and sear the beef on all sides until brown.
Caramelizing the Onions
  1. In the same skillet, reduce heat to low and add sliced onions. Cook for about 15-20 minutes until golden brown and soft.
Combining Ingredients
  1. Transfer the caramelized onions to a slow cooker and place the seared beef on top. Add the beef broth, French onion soup, and thyme.
Cooking
  1. Cover and cook on low for 4-6 hours until the beef is tender and shreds easily.
Finishing Touch
  1. Before serving, add shredded Swiss cheese on top to melt slightly.
Serving
  1. Scoop the beef and onions onto a plate, adding optional baguette slices for a delightful crunch.

Notes

Store in an airtight container in the refrigerator for 3-4 days. Freeze for up to 3 months. Reheat gently with beef broth to maintain moisture.
