  • 1 cup unsalted butter, softened Use high-quality unsalted butter.
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with almond flour for a nutty flavor.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for 2-3 minutes until light and fluffy.
  3. Stir in the vanilla extract until well combined.
  4. Gradually add the flour and salt, mixing until the dough just comes together.
  5. Shape the dough into a log about 2 inches in diameter and wrap it in plastic wrap. Chill in the refrigerator for about 30 minutes.
Baking
  1. Once chilled, slice the log into rounds about 1/4 inch thick.
  2. Place slices on the prepared baking sheet, allowing space for spreading.
  3. Bake for 12-15 minutes until edges are lightly golden.
  4. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies maintain their shape well during baking thanks to the chilling step. Can be stored in an airtight container for up to a week.
