Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for 2-3 minutes until light and fluffy.
- Stir in the vanilla extract until well combined.
- Gradually add the flour and salt, mixing until the dough just comes together.
- Shape the dough into a log about 2 inches in diameter and wrap it in plastic wrap. Chill in the refrigerator for about 30 minutes.
Baking
- Once chilled, slice the log into rounds about 1/4 inch thick.
- Place slices on the prepared baking sheet, allowing space for spreading.
- Bake for 12-15 minutes until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
These cookies maintain their shape well during baking thanks to the chilling step. Can be stored in an airtight container for up to a week.
