Preparation
- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter until well combined.
- Mix in the baking soda and salt to help the bread rise nicely.
- Stir in the sugar, beaten egg, and vanilla extract until well combined.
- Mix in the flour just until incorporated; don’t over-mix!
- If desired, fold in the walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and spread it evenly.
Baking
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serving
- Cut into slices and enjoy with a cup of coffee, a refreshing smoothie, or spread with cream cheese or butter.
Notes
Store in an airtight container to maintain moisture. For freezing, wrap individual slices in plastic wrap and place them in a freezer bag. To reheat, microwave slices for about 10-15 seconds or toast lightly.
