Wet Ingredients
  • 1 cup Greek yogurt Make sure it's full-fat for best texture.
  • 2 large eggs
Dry Ingredients
  • 1/4 cup almond flour Can be substituted for other nut flours.
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp garlic powder Optional for savory flavor.
  • 1 tsp sweetener Optional for a hint of sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even cooking.
  2. In a large mixing bowl, combine the Greek yogurt and eggs. Mix until smooth.
  3. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, salt, and any optional spices.
  4. Gradually add the dry ingredients into the wet ingredients, stirring continuously until fully combined.
  5. Transfer the dough into a greased loaf pan and smooth the top.
  6. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack.

Notes

Wrap tightly in plastic wrap or foil for storage in the fridge for up to a week. Can freeze individual slices for up to three months.
