Preparation
- Preheat your oven to 350°F (175°C) to ensure even cooking.
- In a large mixing bowl, combine the Greek yogurt and eggs. Mix until smooth.
- In a separate bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, salt, and any optional spices.
- Gradually add the dry ingredients into the wet ingredients, stirring continuously until fully combined.
- Transfer the dough into a greased loaf pan and smooth the top.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Allow cooling in the pan for 10 minutes before transferring to a wire rack.
Notes
Wrap tightly in plastic wrap or foil for storage in the fridge for up to a week. Can freeze individual slices for up to three months.
