Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Fruit Ingredients
  • 1 cup fresh peaches, diced (about 2 medium peaches) Use ripe peaches for best flavor.
  • Optional: Cinnamon sugar for sprinkling on top

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.
  3. In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the diced peaches.
Baking
  1. Using a tablespoon, drop rounded scoops of cookie dough onto the prepared baking sheet, leaving about 2 inches of space between each scoop.
  2. Bake for 12-15 minutes, until the edges are golden and the centers appear set.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  4. Enjoy them warm!

Notes

Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for a week. To warm up, microwave for 10-15 seconds.
