Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.
- In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Gently fold in the diced peaches.
Baking
- Using a tablespoon, drop rounded scoops of cookie dough onto the prepared baking sheet, leaving about 2 inches of space between each scoop.
- Bake for 12-15 minutes, until the edges are golden and the centers appear set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
- Enjoy them warm!
Notes
Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for a week. To warm up, microwave for 10-15 seconds.
