Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour Sifted
  • 2 tablespoons sugar
  • 2 teaspoons baking powder Make sure it's fresh
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tablespoons melted butter (or your favorite oil)
  • 1 teaspoon vanilla extract

Preparation
  1. In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until thoroughly combined.
  3. Pour the wet ingredients into the dry mixture. Stir gently using a wooden spoon or spatula until just combined; it’s okay if there are a few lumps!
Cooking
  1. Heat a non-stick skillet over medium heat.
  2. For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface (approximately 2-3 minutes), then flip and cook for an additional 1-2 minutes, or until golden brown.
  3. Serve the pancakes immediately, paired with your favorite toppings!

Notes

Store leftovers in an airtight container for up to three days or freeze for up to two months. Reheat in toaster, microwave, or oven.
