Preparation
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
- In a large bowl, combine the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk these together until well blended.
- In another bowl, mix the milk, cooled brewed coffee, vegetable oil, vanilla extract, and eggs. Beat these ingredients together until you achieve a nice, smooth mixture.
- Pour the wet mixture into the dry ingredients while stirring gently. Be careful not to overmix; it's better to leave some lumps than to have tough muffins!
- Spoon the batter into the prepared muffin tin. Fill each cup about two-thirds full for the perfect rise.
Baking
- Place the muffin tin in the preheated oven and bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Cooling
- Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack. Enjoy warm, or store for later!
Notes
For best results, use fresh baking ingredients and avoid overmixing the batter. Customize with chocolate chips or nuts if desired. Store in an airtight container for up to 3 days, or freeze for longer shelf life.
