  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your preference) Choose your favorite cheese.
  • 1/2 cup cooked and crumbled chicken or diced veggies (like bell peppers, spinach, or mushrooms) Feel free to get creative with fillings.
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Spray a muffin tin with cooking spray or lightly oil it.
  3. In a large mixing bowl, whisk together the eggs, cottage cheese, and season with salt and pepper.
  4. Gently fold in your shredded cheese and chosen add-ins.
  5. Pour the egg mixture into each muffin cup, filling them about three-quarters full.
  6. Place the muffin tin into the preheated oven and bake for 20-25 minutes or until the tops are firm and slightly golden.
  7. Let the egg bites cool in the muffin tin for a few minutes before gently lifting them out.
  8. Serve them warm and enjoy!

Notes

Feel free to swap cottage cheese for Greek yogurt for a tangy twist or experiment with different fillings. Store leftovers in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
