- Preheat your oven to 350°F (175°C).
- Spray a muffin tin with cooking spray or lightly oil it.
- In a large mixing bowl, whisk together the eggs, cottage cheese, and season with salt and pepper.
- Gently fold in your shredded cheese and chosen add-ins.
- Pour the egg mixture into each muffin cup, filling them about three-quarters full.
- Place the muffin tin into the preheated oven and bake for 20-25 minutes or until the tops are firm and slightly golden.
- Let the egg bites cool in the muffin tin for a few minutes before gently lifting them out.
- Serve them warm and enjoy!
Notes
Feel free to swap cottage cheese for Greek yogurt for a tangy twist or experiment with different fillings. Store leftovers in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
