Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the flour, baking powder, salt, baking soda, and sugar. Mix until well blended.
  3. In another bowl, whisk together the cottage cheese, melted butter, and egg until smooth.
  4. Gradually fold the wet mixture into the dry ingredients until just combined. Be careful not to overmix; a few lumps are okay!
  5. Using a spoon or cookie scoop, drop spoonfuls of batter onto a lined baking sheet, spacing them out evenly.
  6. Bake for 20–25 minutes until the tops are golden brown.
  7. Remove from the oven and let them cool for a few minutes on a wire rack before serving.
Serving

Notes

These rolls can be stored at room temperature for up to 2 days or refrigerated for a week. They freeze well for up to 3 months.
