Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the flour, baking powder, salt, baking soda, and sugar. Mix until well blended.
- In another bowl, whisk together the cottage cheese, melted butter, and egg until smooth.
- Gradually fold the wet mixture into the dry ingredients until just combined. Be careful not to overmix; a few lumps are okay!
- Using a spoon or cookie scoop, drop spoonfuls of batter onto a lined baking sheet, spacing them out evenly.
- Bake for 20–25 minutes until the tops are golden brown.
- Remove from the oven and let them cool for a few minutes on a wire rack before serving.

Notes
These rolls can be stored at room temperature for up to 2 days or refrigerated for a week. They freeze well for up to 3 months.
