Dough Ingredients
  • 1 cup cottage cheese
  • 2 cups all-purpose flour Can substitute with whole wheat or gluten-free flour.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water Add gradually until a soft dough forms.
Cooking Ingredients
  • Olive oil olive oil for frying Can also use garlic-infused olive oil for added flavor.

Preparation
  1. In a large mixing bowl, combine the cottage cheese, flour, baking powder, and salt. Use a spatula to mix until it starts coming together.
  2. Gradually add the water, a tablespoon at a time, mixing until a soft dough forms. Adjust the water or flour as needed for consistency.
  3. Once a dough ball forms, knead gently on a floured surface for 1-2 minutes until smooth. Let it rest for about 5 minutes.
  4. Divide the dough into small balls, roughly the size of a golf ball, and flatten each into a circle about ΒΌ inch thick.
Cooking
  1. Heat a skillet over medium heat and add a drizzle of olive oil. Place one flattened dough in the skillet.
  2. Cook until golden brown, about 2-3 minutes, then flip and cook the other side for another 2-3 minutes.
  3. Repeat with the remaining dough.
  4. Serve warm, optionally brushing with a bit more olive oil.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a skillet over low heat.
