Preparation
- In a large mixing bowl, combine the cottage cheese, flour, baking powder, and salt. Use a spatula to mix until it starts coming together.
- Gradually add the water, a tablespoon at a time, mixing until a soft dough forms. Adjust the water or flour as needed for consistency.
- Once a dough ball forms, knead gently on a floured surface for 1-2 minutes until smooth. Let it rest for about 5 minutes.
- Divide the dough into small balls, roughly the size of a golf ball, and flatten each into a circle about ΒΌ inch thick.
Cooking
- Heat a skillet over medium heat and add a drizzle of olive oil. Place one flattened dough in the skillet.
- Cook until golden brown, about 2-3 minutes, then flip and cook the other side for another 2-3 minutes.
- Repeat with the remaining dough.
- Serve warm, optionally brushing with a bit more olive oil.
Notes
Store leftovers in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a skillet over low heat.
