Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter and peanut butter. Blend until smooth.
- Add brown sugar and granulated sugar, mixing until well incorporated.
- Add in the egg and vanilla extract, blending until creamy.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the mini marshmallows and chocolate chips with a spatula.
Baking
- Line a baking sheet with parchment paper.
- Drop heaping spoonfuls of cookie dough onto the baking sheet, about two inches apart.
- Bake for about 10-12 minutes, or until edges are golden brown and centers are slightly soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
