Ingredients
  

For the Salsa
  • 2 cups fire-roasted cherry tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced Adjust amount based on heat preference.
  • 1 lime, juiced
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your grill or broiler to medium-high heat.
  2. Place the cherry tomatoes directly on the grill or on a baking sheet for the broiler and roast for about 7-10 minutes, turning occasionally until they have charred skins and are softened.
  3. While the tomatoes are roasting, finely chop the red onion, fresh cilantro, and jalapeño. Adjust the jalapeño amount based on your heat preference.
Combine and Serve
  1. In a mixing bowl, combine the fire-roasted cherry tomatoes, chopped red onion, cilantro, and jalapeño.
  2. Squeeze the lime juice over the mixture, and season it with salt and pepper to taste.
  3. Give everything a good stir! Taste and adjust the seasoning if necessary.
  4. Let the salsa sit for at least 10 minutes before serving to allow the flavors to meld beautifully.

Notes

For best flavor, make your salsa a few hours in advance or prepare it the night before. Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. When reheating, gently warm on the stove.
