  • 1 cup mashed figs Substitute with prunes or dates if figs are unavailable.
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard muffin pan or line it with paper liners.
  3. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and cardamom. Whisk until combined.
  4. In another bowl, whisk together the mashed figs, milk, both sugars, vegetable oil, eggs, and vanilla extract until smooth.
  5. Gradually add the wet mixture to the dry ingredients, stirring gently with a spatula until just combined.
  6. Fill each muffin cup about two-thirds full with batter.
Baking
  1. Place the muffin pan in the oven and bake for approximately 20-25 minutes or until a toothpick inserted in the center comes out clean.
  2. Remove the muffins from the oven, let them cool for a few minutes in the pan, then transfer to a wire rack to cool completely.

Notes

For perfect muffins, avoid overmixing and keep an eye on the baking time as it may vary by oven. Enjoy with a drizzle of honey or cream cheese frosting if desired. These muffins can be frozen and reheated easily.
