Preparation
- Preheat your oven to 350°F (175°C).
- Grease a standard muffin pan or line it with paper liners.
- In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and cardamom. Whisk until combined.
- In another bowl, whisk together the mashed figs, milk, both sugars, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring gently with a spatula until just combined.
- Fill each muffin cup about two-thirds full with batter.
Baking
- Place the muffin pan in the oven and bake for approximately 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Remove the muffins from the oven, let them cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
Notes
