Ingredients
  

For the Cookies
  • 1 cup dried figs, chopped
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
Mix the Dry Ingredients
  1. In a bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined. Set aside.
Combine Sweeteners
  1. In a separate bowl, cream together the softened butter and brown sugar until fluffy. This should take about 2-3 minutes.
Incorporate Honey and Egg
  1. Add the honey and mix well. Then, whisk in the egg and vanilla extract until smooth.
Combine Everything
  1. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Gently fold in the chopped figs.
Portion the Dough
  1. Using a tablespoon, drop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake
  1. Place in the preheated oven and bake for 12-15 minutes or until the edges are lightly golden.
Cool
  1. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

You can substitute figs with dried apricots or dates for a different flavor. Store cookies in an airtight container for up to a week or freeze for 3 months.
