Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large mixing bowl, combine the softened butter, granulated sugar, and powdered sugar. Beat them together until smooth and creamy.
  3. Add the egg and vanilla extract to the mixture, and continue mixing until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt, then gradually add this dry mixture to the wet ingredients, mixing until a soft dough forms.
  5. Optionally, add food coloring to the dough for a festive touch and mix until evenly distributed.
  6. Use a cookie scoop or your hands to form balls of dough and place them on a lined baking sheet, spacing them about 2 inches apart.
  7. Optionally, flatten each ball slightly if desired.
Baking
  1. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are light golden brown.
Cooling and Decorating
  1. Once baked, allow the cookies to cool on a wire rack.
  2. Decorate with sprinkles or icing as desired after cooling.

Notes

For best results, consider chilling the dough for about 30 minutes before baking for chewier cookies. Store in an airtight container at room temperature for up to one week or freeze for up to three months. To restore texture, warm in a preheated oven at 300°F (150°C) for a few minutes.
