  • 6 large large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or Swiss)
  • 4 cups diced potatoes (fresh or frozen)
  • 1 cup chopped cooked chicken or turkey (as a Halal-friendly substitute)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using fresh potatoes, wash and dice them into small cubes. For frozen, use them directly but ensure they are mostly thawed.
  3. In a large bowl, whisk together the eggs and milk until well blended. Season with salt and pepper to taste.
  4. Stir in the chopped bell pepper, onion, cooked chicken or turkey, and cheese until evenly distributed.
  5. Lightly grease a 9x13-inch baking dish with olive oil or cooking spray. Spread the diced potatoes across the bottom and pour the egg mixture over them.
Baking
  1. Place the casserole in the preheated oven and bake for about 45-50 minutes, or until the eggs are set and lightly golden on top.
Serving
  1. Let the casserole cool for a few minutes before slicing. Serve hot and enjoy!

Notes

If you want to add some freshness, consider using spinach or kale instead of bell pepper. For a heartier dish, add your favorite Halal-friendly sausage. Let the dish cool slightly to ease slicing, and avoid using too many ingredients as that can make the casserole soupy. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
