Method
 

Preparation of Crust
  1. In a bowl, combine the graham cracker crumbs and melted butter until the crumbs are well coated.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan to form a solid crust.
  3. Refrigerate while you prepare the filling.
Making the Filling
  1. In a large mixing bowl, beat the cream cheese with a hand mixer on medium speed until smooth and creamy, about 2-3 minutes.
  2. Slowly add in the powdered sugar and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, taking about 3-4 minutes.
  4. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate it.
  5. Spread the filling evenly over the crust in the springform pan and smooth the top with a spatula.
Chilling
  1. Cover the cheesecake and place it in the refrigerator for at least 4 hours or overnight to set properly.
