  • 2 tablespoons extra-virgin olive oil, plus more for drizzling Use good quality olive oil.
  • 1/2 teaspoon ground cumin

Preparation
  1. Gather all your ingredients, ensuring the chickpeas are well-drained and rinsed.
  2. In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, ground cumin, and a pinch of salt.
  3. Blend until smooth, then gradually add water, one tablespoon at a time, until you reach your desired consistency.
  4. Taste the hummus and adjust the salt or add more lemon juice if preferred.
  5. Transfer the hummus to a bowl, drizzle with extra olive oil, and top with paprika or fresh herbs as desired.

Notes

For the creamiest hummus, consider peeling the chickpeas before blending. Store leftovers in an airtight container in the fridge for about 4 to 5 days. Freezing is also an option for longer storage.
