Preparation
- Boil the Eggs: Start by placing the eggs in a saucepan and covering them with water (about an inch above the eggs). Bring the water to a boil over medium-high heat. Once boiling, reduce the heat and let them simmer for about 9-12 minutes. Once cooked, drain the hot water and immerse the eggs in cold water for a few minutes to cool.
- Prepare the Filling: While the eggs are cooling, take a bowl and add your chopped boiled eggs. Mix in the mayonnaise, a pinch of salt, and pepper to taste. Mash everything together until well combined.
- Assemble the Sandwich: Take two slices of your favorite bread, and if you desire, add lettuce leaves for an extra layer of crunch. Spoon the egg mayo filling generously onto one slice and then cover it with the other slice. Press gently to ensure everything sticks together.
- Serve and Enjoy: Cut the sandwich diagonally and serve it right away. Sprinkle some paprika on top or serve alongside pickles for an added touch.
Notes
Store leftover filling in an airtight container for up to 3 days. Keep the filling separate from the sandwich until you're ready to eat to maintain freshness.
