Ingredients
  

Salad Ingredients
  • 2 cups edamame, shelled (fresh or frozen) If using frozen, cook according to package instructions.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped Can substitute with parsley if desired.
Dressing Ingredients
  • 2 tablespoons lime juice Juice of about 2 limes.
  • 3 tablespoons olive oil
  • to taste salt and pepper Be cautious with the salt.

Method
 

Preparation
  1. If using frozen edamame, cook according to package instructions until tender. Drain and let cool.
  2. Halve the cherry tomatoes, dice the red onion, and chop the cilantro.
Dressing Mix
  1. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Taste and adjust seasoning as desired.
Combine and Serve
  1. In a large bowl, mix together the edamame, cherry tomatoes, red onion, and cilantro. Pour the dressing over the salad and toss gently to combine.
  2. For best flavor, let the salad chill in the fridge for about 10 minutes before serving.

Notes

This salad can be prepared a few hours ahead, but it's recommended to add the dressing just before serving for the freshest taste. Store leftovers in an airtight container in the refrigerator for up to 2 days.
