Pasta and Sauce Ingredients
  • 8 oz pasta of choice (spaghetti, penne, or fettuccine) Choose your preferred pasta type.
  • 1 cup pumpkin puree Ensure it's pure pumpkin, not pumpkin pie filling.
  • 1/2 cup vegetable broth
  • 1/4 cup coconut milk Adds creaminess to the sauce.
  • 2 cloves garlic, minced For flavor.
  • 1 tsp onion powder Adds an allium touch.
  • 1 tsp nutritional yeast Adds a cheesy flavor.
  • Salt and pepper to taste Season to your liking.
  • Fresh herbs for garnish Optional but adds a lovely touch.

Method
 

Cooking the Pasta
  1. Start by boiling a pot of salted water. Add the pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of pasta water and then drain the rest.
Preparing the Sauce
  1. In a large pan over medium heat, drizzle a bit of olive oil and briefly sauté the minced garlic for about 1 minute until fragrant. Be careful not to burn it!
  2. Pour in the pumpkin puree, vegetable broth, and coconut milk into the pan. Stir to combine and let it cook for 3-4 minutes until heated through.
  3. Sprinkle in the onion powder and nutritional yeast. Season with salt and pepper to your taste. If the mixture is too thick, add a bit of the reserved pasta water to reach your desired consistency.
Combining and Serving
  1. Add the drained pasta directly into the sauce, tossing it gently until every piece is beautifully coated.
  2. Top with fresh herbs if desired and serve immediately for that best, fresh flavor experience!

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days or freeze portions for long-term storage. Reheat on low heat and add a splash of vegetable broth or coconut milk to maintain creaminess.
