Ingredients
  

Brownie Ingredients
  • 1 cup all-purpose flour Ensure gluten-free if needed.
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar Can substitute with coconut sugar.
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted Can use non-dairy butter.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Mascarpone Layer Ingredients
  • 1 cup mascarpone cheese
  • 1/2 cup brewed coffee, cooled Use medium roast for best flavor.
  • to taste Cocoa powder for dusting
  • optional Chocolate shavings for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine flour, cocoa powder, granulated sugar, brown sugar, and a pinch of salt.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract. Gradually add this wet mixture to the dry ingredients, stirring until well combined.
Baking
  1. Pour the brownie batter into the prepared pan and spread evenly.
  2. Bake in the preheated oven for about 20 to 25 minutes, or until a toothpick comes out with a few moist crumbs.
  3. Allow the brownies to cool in the pan for about 10 to 15 minutes before transferring to a wire rack to cool completely.
Mascarpone Layering
  1. Mix mascarpone cheese with the cooled brewed coffee until smooth and velvety.
  2. Once the brownies are cooled, spread the mascarpone mixture evenly over the top.
  3. Optional: Refrigerate for an hour for a firmer texture.
Garnishing
  1. Dust the top with cocoa powder and add chocolate shavings if desired.
  2. Cut into squares and serve!

Notes

Store in an airtight container in the refrigerator for up to a week. Can freeze for up to three months. To reheat, let sit at room temperature or warm briefly in the microwave.
