Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.
- In a mixing bowl, combine flour, cocoa powder, granulated sugar, brown sugar, and a pinch of salt.
- In another bowl, whisk together the melted butter, eggs, and vanilla extract. Gradually add this wet mixture to the dry ingredients, stirring until well combined.
Baking
- Pour the brownie batter into the prepared pan and spread evenly.
- Bake in the preheated oven for about 20 to 25 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow the brownies to cool in the pan for about 10 to 15 minutes before transferring to a wire rack to cool completely.
Mascarpone Layering
- Mix mascarpone cheese with the cooled brewed coffee until smooth and velvety.
- Once the brownies are cooled, spread the mascarpone mixture evenly over the top.
- Optional: Refrigerate for an hour for a firmer texture.
Garnishing
- Dust the top with cocoa powder and add chocolate shavings if desired.
- Cut into squares and serve!
Notes
Store in an airtight container in the refrigerator for up to a week. Can freeze for up to three months. To reheat, let sit at room temperature or warm briefly in the microwave.
