Ingredients
  

Meat and Beans
  • 1 pound ground beef or turkey Choose lean meat for a healthier option.
  • 1 packet taco seasoning Or use homemade seasoning.
  • 1 can black beans, drained and rinsed Can substitute with pinto beans.
  • 1 can corn, drained Can use frozen corn if preferred.
  • 1 cup salsa Choose mild or spicy based on preference.
Toppings and Cheese
  • 2 cups tortilla chips, crushed For best texture, avoid overly salty chips.
  • 2 cups shredded cheese (cheddar or Mexican blend) Use fresh shredded cheese for better melting.
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • to taste Chopped green onions for garnish Add just before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to prepare for baking.
  2. In a large skillet, cook the ground beef or turkey over medium heat, breaking it apart until browned (about 5-7 minutes).
  3. Stir in the taco seasoning and allow it to infuse into the meat for an additional 2-3 minutes.
  4. Combine the black beans, corn, and salsa in the skillet, stirring until well mixed and heated through.
Assembly and Baking
  1. In a large baking dish, layer the crushed tortilla chips at the bottom.
  2. Spread the meat and vegetable mixture over the tortilla chips.
  3. Sprinkle the shredded cheese evenly over the top.
  4. Place in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
Serving
  1. Once baked, let it cool slightly. Top with dollops of sour cream and chopped green onions before serving.

Notes

If using leftovers, store in an airtight container in the fridge for 3-4 days. For longer storage, freeze for up to 2 months. Reheat in the oven at 350°F for 15-20 minutes.
