- In a large pot, heat a tablespoon of olive oil over medium heat. Add the ground turkey and cook until browned, around 5-6 minutes. Drain any excess fat.
- Add the chopped onion and minced garlic to the pot. Sauté until the onions become translucent, approximately 2-3 minutes.
- Stir in the black beans, kidney beans, corn, crushed tomatoes, diced tomatoes with green chilies, broth, and taco seasoning.
- Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 20-30 minutes, allowing the flavors to meld together.
- Taste the soup and add salt and pepper as needed.
- Ladle the soup into bowls and let everyone customize their toppings!
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat on the stovetop over low heat.
