  • 1 pound ground turkey (or beef if you prefer)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) crushed tomatoes
  • 2 cans (10 oz each) diced tomatoes with green chilies
  • 2 cups beef or vegetable broth
  • 2 tablespoons taco seasoning
  • Salt and pepper to taste

  • sour cream
  • avocado
  • cilantro
  • tortilla chips

Method
 

Preparation
  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the ground turkey and cook until browned, around 5-6 minutes. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onions become translucent, approximately 2-3 minutes.
  3. Stir in the black beans, kidney beans, corn, crushed tomatoes, diced tomatoes with green chilies, broth, and taco seasoning.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 20-30 minutes, allowing the flavors to meld together.
  5. Taste the soup and add salt and pepper as needed.
  6. Ladle the soup into bowls and let everyone customize their toppings!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat on the stovetop over low heat.
