Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/2 cup butter, melted
For the cheesecake filling
  • 2 cups cream cheese, softened Make sure it's at room temperature for easier mixing.
  • 1 cup powdered sugar Can be substituted for a sugar alternative.
  • 1 teaspoon vanilla extract
For the topping
  • 2 cups fresh strawberries, sliced You can substitute with other fruits like raspberries or blueberries.
  • 1 cup whipped cream Homemade works best, but store-bought is fine.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the graham cracker crumbs and melted butter until combined.
  3. Press the mixture firmly into the bottom of a lined 8x8-inch baking dish to form an even crust.
  4. Bake for 10 minutes, then let it cool.
Filling
  1. In a separate bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Gradually add in the powdered sugar and vanilla extract, mixing until fully combined and fluffy.
Assembly
  1. Pour the cheesecake mixture over the cooled graham cracker crust.
  2. Smooth it out with a spatula to create an even layer.
Topping
  1. Gently press the sliced fresh strawberries into the cheesecake filling.
  2. Refrigerate for at least one hour to set.
Serving
  1. Once set, cut the cheesecake into bars and top each piece with a dollop of whipped cream before serving.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Freeze for up to 2 months if wrapped properly. Thaw overnight in the refrigerator for best texture.
