Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk until just combined. Fold in the chopped strawberries gently.
- Pour the batter into the greased loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, allow the bread to cool in the pan for about 10-15 minutes before transferring it to a wire rack.
Notes
Store wrapped in plastic or an airtight container at room temperature for up to 3 days. For longer storage, freeze slices wrapped tightly for up to 2 months. Reheat by microwaving for about 15-20 seconds.
