Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened or Halal substitute
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk or Halal substitution, such as plain yogurt or milk with a splash of lemon juice
Main Ingredient
  • 1 cup fresh strawberries, hulled and chopped or Halal-friendly frozen strawberries

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk until just combined. Fold in the chopped strawberries gently.
  5. Pour the batter into the greased loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  6. Once baked, allow the bread to cool in the pan for about 10-15 minutes before transferring it to a wire rack.
