Easy Spinach Pasta

  • 8 oz Spaghetti or pasta of choice About 2 cups uncooked
  • 4 cups Fresh spinach About 1 large bag
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • ½ cup Parmesan cheese, grated
  • Salt To taste
  • Pepper To taste

Method
 

Preparation
  1. In a large pot of boiling salted water, add the pasta of your choice. Cook according to package instructions until al dente, usually about 9-11 minutes. Remember to reserve about ½ cup of pasta water before draining!
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant and golden. Make sure not to burn the garlic!
  3. Toss in the fresh spinach and cook until wilted, which should take about 3 minutes. Stir frequently to combine with the garlic and oil.
  4. Add the drained pasta to the skillet. Mix well to coat the pasta with the garlic oil and spinach. If the dish seems too dry, gradually add some reserved pasta water until you reach your desired consistency.
  5. Stir in the grated Parmesan cheese along with salt and pepper to taste. Mix until everything is well combined – the cheese will melt and create a creamy texture.
  6. Plate your Easy Spinach Pasta hot, garnished with extra Parmesan and a drizzle of olive oil if desired. Enjoy!

Notes

If you have leftovers, refrigerate in an airtight container for 3-4 days. Reheat in the microwave or on the stove with a splash of water or olive oil if dry.
