  • 1 loaf loaf of bread Use a sturdy loaf for the best results.
  • 2 cups fresh spinach, chopped Can substitute with kale or Swiss chard.
  • 1 cup feta cheese, crumbled Goat cheese or ricotta can be used as substitutes.
  • 2 large eggs Can be replaced with flaxseed mixture for vegan variation.
  • 1/2 cup milk Use a plant-based milk for a vegan option.
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice off the top of the loaf of bread about 1 inch from the top and hollow out the inside, leaving about an inch of bread on the sides and bottom.
  3. In a medium-sized skillet, heat a tablespoon of olive oil over medium heat and sauté the chopped spinach until wilted, about 3-5 minutes.
  4. In a mixing bowl, combine the wilted spinach, crumbled feta cheese, eggs, milk, garlic powder, salt, and pepper, and stir until well mixed.
  5. Spoon the spinach and feta mixture into the hollowed loaf, pressing it down gently to pack in the filling.
Baking
  1. Place the stuffed loaf onto a baking sheet and bake in the oven for about 30 minutes, or until the top is golden brown.
  2. Remove the loaf from the oven and let it cool for a few minutes before slicing and serving warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
