Preparation
- Preheat your oven to 350°F (175°C).
- Grease a standard loaf pan with a little butter or cooking spray.
- In a large mixing bowl, blend the softened butter and sugar together until light and fluffy (about 2-3 minutes).
- Add in the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually stir the dry mixture into the wet ingredients until just combined.
- Gently fold in the diced peaches until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
This bread is Halal-friendly. You can substitute peaches with other fruits like pears or apples. Be sure to let the bread cool before slicing to prevent it from becoming crumbly. For longer storage, wrap and freeze the loaf; it can last up to 3 months.
