Ingredients
  

For the Cobbler
  • 4 cups plums, pitted and sliced
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • Ground cinnamon (optional) Optional ingredient to enhance flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and warm your skillet over medium heat.
  2. In a bowl, combine sliced plums with half the sugar and a sprinkle of cinnamon if using. Set aside.
  3. In another bowl, mix flour, remaining sugar, baking powder, salt, and milk until well combined, then stir in melted butter and vanilla extract.
  4. Pour the batter into the preheated skillet and gently spoon the plums over the batter.
Baking
  1. Bake the cobbler for 30-35 minutes, until golden brown and a toothpick inserted comes out clean.
  2. Allow to cool slightly before serving warm.

Notes

Feel free to substitute plums with other seasonal stone fruits like peaches or nectarines. Watch closely during the last 10 minutes of baking to avoid burning.
