Ingredients
  

Salad Ingredients
  • 2 cups cucumber, diced Use fresh cucumbers for the best crunch
  • 2 cups tomato, diced Ripe tomatoes add sweetness
  • 1 medium onion, finely chopped Any mild onion will work
  • 1/4 cup fresh parsley, chopped Can be substituted with dill
  • 1/4 cup fresh mint, chopped
Dressing Ingredients
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice Fresh lemon juice is recommended
  • to taste Salt Avoid over-salting
  • to taste Pepper

Method
 

Preparation
  1. Wash and dice the cucumbers and tomatoes.
  2. Finely chop the onion so its flavor melds well with the other ingredients.
Herbs Preparation
  1. Chop the fresh parsley and mint to add aromatic punch.
Combine Ingredients
  1. In a large mixing bowl, combine the diced cucumber, diced tomatoes, chopped onion, parsley, and mint. Toss gently to mix.
Dress the Salad
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour this dressing over the salad and toss to coat.
Taste and Serve
  1. Taste the salad and adjust seasoning with extra salt or lemon juice if desired.
  2. For a refreshing flavor, chill the salad in the refrigerator for about 10 minutes before serving.

Notes

This salad is best enjoyed fresh. If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days. The flavors may intensify over time, but the cucumbers can lose their crunch. Freezing is not recommended.
