Ingredients
  

Crust
  • 1 pre-made crust 1 pre-made pie crust Feel free to opt for your favorite pie crust.
Filling
  • 2 cups 2 cups fresh raspberries Fresh raspberries are recommended for best flavor.
  • 1/4 cup 1/4 cup sugar Adjust sweetness to taste.
  • 2 tablespoons 2 tablespoons cornstarch Helps to thicken the filling.
  • 1 tablespoon 1 tablespoon lemon juice Adds brightness to the filling.
  • 1 egg 1 egg (for egg wash) Whisked for brushing on crust.
  • 1 tablespoon 1 tablespoon butter (optional) For extra richness on top.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the fresh raspberries, sugar, cornstarch, and lemon juice. Gently toss until well mixed.
  3. On a parchment-lined baking sheet, roll out the pre-made pie crust to about a 12-inch circle.
  4. Spoon the raspberry mixture into the center of the rolled-out crust, leaving about a 2-inch border around the edges.
  5. Gently fold the edges of the crust over the filling, overlapping slightly.
  6. Whisk the egg and brush it across the exposed crust.
  7. If using, sprinkle the optional tablespoon of butter on top of the filling. Bake in the oven for about 30 to 35 minutes or until the crust is golden.
  8. Allow the galette to cool for 10 minutes before slicing. Serve warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months before baking. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
