Preparation and Cooking
- In a large pot, heat about 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and continue to cook for another minute, until fragrant.
- Pour in the pumpkin puree and mix well with the sautéed onions and garlic.
- Gradually add the vegetable broth, stirring to combine all ingredients.
- Sprinkle in the ground cinnamon, nutmeg, salt, and pepper. Give it a good stir.
- Increase the heat slightly and bring everything to a gentle simmer. Allow it to cook for about 15 minutes, stirring occasionally.
- Once the flavors have melded together, stir in the coconut milk for a creamy finish. Allow to simmer for another 5 minutes.
- If you prefer a silky smooth texture, use an immersion blender to puree the soup until it’s creamy. Alternatively, you can leave it chunky for a heartier version.
- Give your soup a taste and adjust the seasoning if needed before serving hot.
Notes
Can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months. Reheat over medium heat on the stovetop, adding broth or water to thin if needed.
