Ingredients
  

For the crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
For the filling
  • 1 can pumpkin puree (15 oz)
  • 1 can sweetened condensed milk (14 oz)
  • 2 large eggs
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • Whipped cream (for serving)

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press this mixture into the bottom of a greased 9x13 inch baking dish to form your crust.
  3. In a separate bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, ground cinnamon, ground nutmeg, and salt. Ensure everything is well blended for a rich, velvety texture.
  4. Pour the pumpkin mixture over the prepared crust, spreading it evenly.
  5. Place the dish in the preheated oven and bake for about 40-45 minutes. The filling should be set, and the edges may slightly pull away from the sides.
  6. Once baked, allow the bars to cool in the pan on a wire rack before cutting into squares.
  7. Serve with a generous dollop of whipped cream on top for an added touch of sweetness!

Notes

If you're out of graham crackers, crushed digestive biscuits work wonderfully too. Keep an eye on your bars as they bake; the perfect texture is achieved when the edges are firm, but the center is still slightly soft. Make sure to blend the filling thoroughly to prevent any lumps. Letting the bars cool completely before cutting will result in cleaner slices. Store in the refrigerator for up to 5 days or freeze for up to 2 months in an airtight container.
