Ingredients
  

Pumpkin Mixture
  • 1 can (15 oz) pumpkin puree
  • 1 cup sugar
  • 1/2 cup milk
  • 2 large eggs Can substitute with flax eggs for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
Topping
  • 1 cup all-purpose flour
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the pumpkin puree, sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, combine the all-purpose flour, oats, brown sugar, and melted butter. Mix until crumbly.
  4. Pour the pumpkin mixture into a greased 9x13 inch baking dish and spread the oat mixture evenly over the top.
Baking
  1. Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the pumpkin layer is set.
  2. Allow to cool slightly before serving warm.

Notes

For a more indulgent experience, consider drizzling warm caramel over your servings or topping them with whipped cream. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. Reheat in the oven or microwave as needed.
