- Gather all your ingredients and equipment: a large mixing bowl, a saucepan, and a baking sheet lined with parchment paper.
- In a saucepan over low heat, melt the butter and white chocolate chips together, stirring constantly until smooth. Once melted, remove from heat.
- Stir in the vanilla extract and green food coloring (if using) until fully incorporated.
- In a large mixing bowl, add the rice cereal and pour the melted chocolate mixture over it. Stir gently until all the cereal is coated.
- Sprinkle powdered sugar over the cereal mix and stir to give it a sweet finish.
- Fold in the chopped pistachios for added crunch.
- Pour the mixture onto the prepared baking sheet, spreading it out to cool and set for about 10 minutes.
- Break into pieces and serve! Store leftovers in an airtight container for up to a week.
