  • 2 cups fresh pineapple, diced Use ripe pineapple for best sweetness.
  • 1/2 piece red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 piece jalapeño, seeded and minced Optional for added heat.
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Start by cutting your fresh pineapple into small, bite-sized pieces, aiming for about 2 cups.
  2. Finely chop the red bell pepper and red onion. If you’re looking for a kick, mince the jalapeño.
Combine Ingredients
  1. In a large mixing bowl, toss together the diced pineapple, chopped bell pepper, onion, and jalapeño.
  2. Chop the cilantro and sprinkle it over the mixture, then squeeze in the lime juice and season with salt and pepper.
Mix and Chill
  1. Gently stir everything to combine and let the salsa chill in the refrigerator for about 15 minutes before serving.
Serve
  1. Enjoy your pineapple salsa right away, or save it for later. It’s great with chips, over grilled chicken or fish, or as a topping on tacos!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid mixing in cilantro and lime juice until ready to serve for the brightest flavors.
