Ingredients
  

Dry Ingredients
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
Wet Ingredients and Fillings
  • 1 cup shredded mozzarella cheese Can substitute with other cheeses.
  • ½ cup pepperoni slices (cut into quarters)
  • 1 cup milk
  • 1 large egg
  • ¼ cup olive oil
  • ½ cup marinara sauce For dipping

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or line it with muffin liners.
  2. In a large mixing bowl, sift together the flour, baking powder, garlic powder, onion powder, Italian seasoning, and salt.
  3. Add the cheese and pepperoni to the dry ingredients and mix well until coated.
  4. In another bowl, whisk together the milk, egg, and olive oil until well combined.
  5. Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined.
  6. Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
Baking
  1. Bake for about 15-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  2. Let them cool in the pan for a few minutes, then transfer to a wire rack.
  3. Serve warm, with marinara sauce on the side for dipping.

Notes

For perfect muffins, avoid overmixing the batter and watch baking time closely. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
