Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter with powdered sugar until fluffy, about 2-3 minutes.
  3. Add the vanilla extract and peppermint extract, beating until fully combined.
  4. In a separate bowl, whisk together the flour and salt. Gradually add this mixture to the butter mixture, mixing until just combined.
  5. Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet about 2 inches apart.
Baking
  1. Bake in the preheated oven for about 12-15 minutes, or until the edges are very lightly golden. Don't overbake!
  2. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Finishing Touch
  1. Once cool, dust with powdered sugar to add that final touch of sweetness!

Notes

Store cookies in an airtight container at room temperature for up to one week. They freeze beautifully for up to three months. To enjoy warm cookies, microwave for about 10 seconds.
