Preparation
- In a mixing bowl, combine the creamy peanut butter and powdered sugar. Mix until fully incorporated and smooth.
- Using your hands, shape the peanut butter mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Chocolate Coating
- In a microwave-safe bowl, add the semi-sweet chocolate chips and coconut oil (if using). Heat in 30-second intervals, stirring in between, until melted and smooth.
- Dip each peanut butter ball into the melted chocolate using a fork, ensuring they are fully coated. Shake off any excess chocolate and return them to the baking sheet.
Setting
- Once all the bites are coated, place the baking sheet in the refrigerator for about 30 minutes to let the chocolate set.
- Once firm, enjoy your Easy Peanut Butter Chocolate Bites immediately, or store them in an airtight container!
Notes
Store leftovers in the refrigerator for up to a week or freeze individually for longer storage. Thaw in the refrigerator or at room temperature before enjoying.
