- Preheat Your Oven: Set your oven to 350°F (175°C).
- Prepare the Crust: In a medium bowl, combine graham cracker crumbs and sugar. Pour in the melted butter and mix until crumbly. Press this mixture firmly into the bottom of a greased 9×13-inch baking pan.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add in sugar and vanilla extract, mixing well. Incorporate the eggs one at a time, ensuring everything is blended thoroughly.
- Layer the Filling: Pour the cheesecake mixture over the prepared crust, spreading it evenly.
- Add the Peaches: Spoon the peach preserves over the cheesecake layer, and then scatter the sliced fresh peaches on top.
- Bake: Place the baking pan in the oven and bake for about 30-35 minutes, or until the edges are slightly browned and the center is firm but slightly wobbly.
- Cool and Cut: Once out of the oven, let the bars cool completely in the pan. For best results, refrigerate for at least 2 hours before slicing into squares.
