  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs eggs
  • 1 cup peach preserves
  • 4 pieces fresh peaches, peeled and sliced

  1. Preheat Your Oven: Set your oven to 350°F (175°C).
  2. Prepare the Crust: In a medium bowl, combine graham cracker crumbs and sugar. Pour in the melted butter and mix until crumbly. Press this mixture firmly into the bottom of a greased 9×13-inch baking pan.
  3. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add in sugar and vanilla extract, mixing well. Incorporate the eggs one at a time, ensuring everything is blended thoroughly.
  4. Layer the Filling: Pour the cheesecake mixture over the prepared crust, spreading it evenly.
  5. Add the Peaches: Spoon the peach preserves over the cheesecake layer, and then scatter the sliced fresh peaches on top.
  6. Bake: Place the baking pan in the oven and bake for about 30-35 minutes, or until the edges are slightly browned and the center is firm but slightly wobbly.
  7. Cool and Cut: Once out of the oven, let the bars cool completely in the pan. For best results, refrigerate for at least 2 hours before slicing into squares.

Notes

Store in an airtight container in the refrigerator for 4-5 days. These bars freeze well for up to 2-3 months. Thaw overnight in the refrigerator before serving.
