Ingredients
  

For the Pasta Salad
  • 8 ounces Pasta (your choice) I recommend penne or rotini for texture.
  • 3 tablespoons Olive oil
  • 1 cup Cherry tomatoes Halved.
  • 1 medium Cucumber Diced.
  • 1 small Red onion Finely chopped.
  • 1 cup Feta cheese Crumble.
  • ΒΌ cup Fresh basil leaves Chopped.
  • Salt and pepper To taste.

Method
 

Preparation
  1. In a large pot of boiling salted water, add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally.
  2. Once cooked, drain the pasta in a colander and rinse under cold water to prevent it from continuing to cook.
  3. While your pasta is cooking, chop the cucumber, halve the cherry tomatoes, and finely dice the red onion.
  4. In a large mixing bowl, combine the drained pasta with the chopped vegetables and crumbled feta.
  5. Drizzle the olive oil over the pasta salad and add salt and pepper to taste. Gently toss everything together.
  6. Fold in the chopped fresh basil and give it one last gentle toss to combine all flavors.
  7. Enjoy your Easy Pasta Salad immediately, or let it chill in the refrigerator for 30 minutes.

Notes

Your Easy Pasta Salad can last in the refrigerator for 3-5 days in an airtight container. For longer storage, you can freeze it for up to a month. Serve cold or at room temperature, and add extra feta or fresh herbs before serving for an instant makeover.
