Preparation
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine crushed graham crackers and melted butter until well blended.
- Press this mixture evenly into the bottom of a 9-inch springform pan.
Make the Filling
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add in sugar, mixing until well combined.
- Add sour cream, passion fruit pulp, and vanilla extract, and mix until smooth.
- Incorporate eggs one at a time, ensuring each one is fully mixed before adding the next.
Bake It
- Pour the cream cheese mixture over the crust in the springform pan and spread it evenly.
- Bake for about 45-50 minutes, until the edges are set but the center slightly jiggles.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour.
Chill and Serve
- Once cool, transfer your cheesecake to the refrigerator.
- Chill for at least 4 hours, preferably overnight, before serving.
- Serve chilled, topped with additional passion fruit pulp or seasonal fruits.
Notes
For best results, use room temperature ingredients and avoid overmixing when adding eggs. The cheesecake can be stored in the refrigerator for up to 5-7 days, or frozen slices can be made ahead of time.
