Chicken Bites Ingredients
  • 1 lb chicken breasts, cut into bite-sized pieces Make sure the chicken is halal-friendly.
  • 1 cup breadcrumbs Can be substituted with crushed cornflakes or panko.
  • 1/2 cup grated Parmesan cheese Optional or can be substituted with a plant-based alternative.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 eggs, beaten
  • to taste Olive oil spray Essential for achieving a crispy texture.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line your baking sheet with parchment paper or lightly grease it using olive oil spray.
  3. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper until well combined.
Coating the Chicken
  1. Dip each chicken piece into the beaten eggs, fully coating it.
  2. Transfer the coated chicken pieces to the breadcrumb mixture, ensuring each piece is well-coated.
Baking
  1. Place the coated chicken bites on the prepared baking sheet without touching each other.
  2. Spray the tops lightly with olive oil.
  3. Bake in the preheated oven for 15-20 minutes or until golden brown and fully cooked, flipping them halfway through.
  4. Serve hot with your favorite dipping sauces.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze them for up to a month. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes until crispy.
