Ingredients
  

Main Ingredients
  • 1 cup long-grain rice (white or brown) Use according to preference.
  • 2 cups vegetable broth (or water)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced (any color)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
Optional Toppings
  • diced avocado For added creaminess.
  • fresh cilantro For garnish.
  • lime wedges For a zesty finish.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until they begin to soften.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Cooking
  1. Sprinkle in the cumin and chili powder, mixing well to coat the vegetables.
  2. Add the rice to the pot and stir to combine.
  3. Pour in the vegetable broth (or water) and bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Once the rice is cooked, gently fold in the drained black beans. Taste and season with salt and pepper as needed.
  6. Allow it to simmer for an additional 3-5 minutes until everything is warmed through.
Serving
  1. Remove the pot from heat and fluff the rice with a fork.
  2. Serve with desired toppings, such as creamy avocado slices, bright cilantro, or a spritz of lime juice.

Notes

For added nutrients, sneak in some chopped spinach or kale and adjust cooking time if using brown rice. Leftovers store well and can be reheated with a splash of broth or water.
