Ingredients

Main Ingredients
  • 2 cups rice (preferably basmati or long-grain)
  • 1 lb chicken (cut into pieces, Halal-friendly)
  • 1 onion (chopped)
  • 2 cups chicken broth (or vegetable broth)
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method

Preparation
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add the chicken pieces to the pot, season with salt and pepper, and cook for about 5-7 minutes until they begin to brown.
  3. Toss in the chopped onion and minced garlic, and sauté for another 3-4 minutes until the onion is translucent and fragrant.
  4. Stir in the uncooked rice, mixed vegetables, and paprika until evenly distributed.
  5. Carefully add the chicken broth, bringing everything to a gentle boil.
  6. Once boiling, reduce the heat to low and cover the pot. Let it simmer for 20-25 minutes, or until the rice has absorbed all the broth and is tender.
  7. Fluff the rice with a fork, check the seasoning, and adjust if necessary. Your Easy One Pot Chicken and Rice is now ready to serve!

Notes

Use brown rice for a healthier option, but adjust the cooking time. Ensure chicken pieces are even-sized for consistency. Don't skip browning for depth of flavor. To store, cool completely before transferring to an airtight container. Refrigerate for 3-4 days; freeze for 3 months. Reheat on the stove over low heat or in the microwave.
