Ingredients
  

Base Ingredients
  • 1 cup pitted dates Make sure they are fresh and soft.
  • 1 cup rolled oats
  • 1/2 cup nut butter Any variety works!
  • 1/2 cup chopped nuts Almonds, walnuts, or a mix.
Flavoring Ingredients
  • 1 teaspoon vanilla extract
  • a pinch salt
  • 1/4 cup shredded coconut or chocolate chips Optional.

Preparation
  1. Start by pitting and finely chopping the dates. Use soft, sticky dates for the best results.
  2. In a large mixing bowl, combine the chopped dates, rolled oats, nut butter, vanilla extract, and salt. If using, add the optional shredded coconut or chocolate chips.
  3. Using a spatula or your hands, mix everything together until well combined. The mixture should be sticky but hold together well.
  4. Take a spoonful of the mixture and roll it into small balls or flatten them into cookie shapes on a parchment-lined baking tray.
  5. Place the formed cookies in the refrigerator for at least 30 minutes to help them firm up.
  6. Once set, serve the cookies straight from the fridge or store them in an airtight container for future snacking.

Notes

Store in an airtight container in the refrigerator for up to a week. They can be frozen for up to 3 months. Enjoy them cold straight from the fridge or freezer.
